Amaretto Fig Appetizers Adapted from Philosopher's Kitchen (Random House), by Francine Segan

Mascarpone topped figs are kissed with a sweet crunch of almondy Amaretti cookies. Enjoy as an appetizer with a glass of bubbly Asti-Spumante docg.
24 dried figs
1 cup dry white wine
1/2 cup mascarpone
12 Amaretti cookies, crushed
Bring the figs and wine to a simmer in a small saucepan, over low heat until the figs are soft, about 5 minutes.

Once they are cool enough to handle, cut the figs in half.

Top each half with a dollop of mascarpone and a sprinkle of crushed amaretti.
