Chocolate Dipped Pancetta

Serves 8

1 pound thick cut pancetta or smoked bacon
8 ounces Italian dark chocolate, 70% cacao or higher

Cook the pancetta until crisp.

Meanwhile, melt the chocolate in double boiler over low heat or in the microwave. Dip the pancetta into the chocolate and place the slices onto a wire rack or baking sheet.

Allow to chocolate to harden slightly and serve.
